MUSHROOM KNOWLEDGE AND MUSHROOM TASTING IN THE HEART OF PARNASSUS

Description

Autumn Parnassos invites us to experience a full-day experience that combines nature, knowledge, foraging and gastronomy . A suitable season not only for a simple walk in the forest but also a journey into the wonderful world of mushrooms and the aromas of autumn nature.

With mycologist Olga Tzogas as our companion , we will explore the forest and get to know the fascinating world of mushrooms and wild plants. We will learn about their valuable role in the balance of the ecosystem, we will become familiar with basic principles of identification and safe foraging , and we will discover which species can be used in cooking, which have therapeutic uses, and which require special attention. Through observation and the activation of all senses, we will collect different types of mushrooms and create an identification table, which will be a tool for every naturalist who aspires to be introduced to the wonderful universe of fungi.

Our journey will continue with an outdoor meal , curated by the experienced outdoor chef Nikos Angelis , in a warm and welcoming atmosphere in the forest. The selection and preparation will take place while we are around our outdoor bench, giving us the opportunity to get to know the ingredients and see how the fruits of foraging can be transformed into flavors. Thus, we will enjoy a seasonal menu , with different appetizers and preparations that will be served gradually, creating a relaxed and convivial experience around food and directly connecting our food with nature.

A different introduction to Parnassos, through the people, organisms and flavors that make up its living ecosystem.

*It would be useful to have a wicker basket, a small knife or pocket knife, a paintbrush or a cotton cloth, a notebook and a pen with you.

**Please kindly inform us if there is any dietary requirement or allergy.

*** In the event of a limited variety of raw materials obtained from the field, the menu may be supplemented with other selected products in their preserved form.
